Preparation

  • Start by gathering all your ingredients. You’ll need 2 cups of cooked jasmine rice, 1 pound of diced chicken breast, 2 tablespoons of soy sauce, 2 cloves of minced garlic, 3 chopped green onions, 1 cup of mixed peas and carrots, 2 tablespoons of sesame oil, and 2 scrambled eggs. Having everything ready will make the cooking process smoother.

Cooking

  • In a large skillet or wok, heat the sesame oil over medium-high heat. Add the diced chicken and cook for about 5-7 minutes until golden brown. Stir occasionally. Add minced garlic and stir-fry for 30 seconds. Incorporate the cooked jasmine rice, breaking up clumps. Add soy sauce and mixed peas and carrots, stirring for 3-4 minutes. Create a well in the center, pour in scrambled eggs, and stir until fully cooked. Finally, add chopped green onions and stir for another minute. Serve and enjoy!
